Skinny Monkey Cookies

This was a Pinterest find and I tried them out today. I would like them a tad bit sweeter, but for about 50 calories each, I can't complain and they have some really good stuff in them! Hope this helps me quench some sweets cravings!!


Ingredients:

  • 3 bananas
  • 2 cups old-fashioned oats
  • 1/4 cup creamy peanut butter
  • 1/4 cup unsweetened cocoa powder
  • 1/3 cup unsweetened applesauce
  • 1 tsp. vanilla extract
  • Dash of cinnamon (optional)

Directions:

Preheat oven to 350°F.  Mash bananas in a large bowl, then stir in remaining ingredients. Let batter stand for approximately 20 minutes, then drop by teaspoonfuls onto ungreased cookie sheet. Sprinkle with cinnamon if desired. Bake 10-12 minutes.

Freezing Directions:

Cool completely, then place cookies in a freezer bag. Seal, label, and freeze.

Sweet Potato Pancakes

   Oh, these are soooooo good!! They are moist and fluffy!

3/4 lbs mashed sweet potatoes (or, if you have made mashed ones for a side dish, like I did, use your leftovers)
1 1/2 cups flour
3 1/2 tsp baking powder
1 tsp salt
1/2 tsp nutmeg  (I added a little cinnamon instead)
1 Tbsp sugar (optional--this just sweetens it a little if you don't use nutmeg)
2 eggs slightly beaten
1 1/2 cups milk
1/4 cup melted butter


This makes about a dozen medium size pancakes and they are yummy!!

Garden Start

Though it has reached eighty degrees already here in mid-March, it is still not quite time to plant everything in the garden yet. I've planted potatoes, onions, and garlic in my raised beds and more to come in a few weeks!

I finally convinced my husband that we needed a few raised beds instead of just a wide open space. Our garden area is really, well, HUGE! Too huge, to tell you the truth. So, since I have not flower beds, I've contrived a garden plan that incorporates flowers and veggies...the best of both worlds!

I love using tractor tires for flower beds! I plan to plant flowers in them...I am so pumped about having flowers again!!

Galvanized metal raised beds...are now filled with dirt and potatoes, onions, and garlic planted!

This is just for fun....my four year old had to have a "lake" for his boat (:
